As co-director of the 4-star luxury hotel, which also hosts a 3 Rosette Michelin guide restaurant, Caroline carefully balances offering a world-class indulgent escape with very real attention to environmental sustainability: initiatives at the hotel include a biomass woodchip boiler, an in-vessel composting system, a thriving vegetable garden, and a partnership with local charity Trees for Life.
